GREAT FOOD, VIBRANT SPACE: Ruckus Taco Co. close to opening in Canton
A former executive chef at multiple high-end metro-Detroit restaurants, Jeremy Kalmus decided to pursue the “American Dream” eight years ago.
With $3,000 to work with, he launched the Ruckus Taco Co., a food-cart business he transported to any event that was attended by people who love delicious, chef-driven street tacos (and much more).
Fueled by hustle, amazing food and savvy promotion (in addition to the food truck, Kalmus sells his food out of a vintage Airstream trailer inside Corktown’s Detroit Axe), the company grew into a much-in-demand catering and food truck business.
Fast forward to next month when Ruckus Taco Co. is set to open its first brick-and-mortar location at 43315 Joy Road in Canton.
Dream come true
“We are very excited, to say the least,” said Kalmus. “It’s been a dream of mine for a long time to own my own brick-and-mortar restaurant, so when the space in Canton became available, we went for it.
“My family and I live in Plymouth, so it’s only a few minutes from our home, which is nice.”
Ruckus is moving into the site of the former Olympus Coney Island in the Coventry Commons business complex, just southeast of the intersection of Joy and Morton-Taylor roads.
To say he has completely transformed the space is an understatement times 1,000.
Restaurant is vibrant, welcoming
Now vibrant with freshly-painted, brightly-colored walls and a neon wall hanging that reads “Feed Me Tacos and Tell Me I’m Pretty”, the restaurant delivers an electric vibe.
There are even a few old-school pinball machines in the restaurant for kids of all ages.
“It was pretty much gutted when we started the renovation,” Kalmus said. “It was a DIY job, but I think it turned out great.”
Kalmus admitted he didn’t have any remodeling experience in his background.
“I do now,” he said, laughing.
“We’re at the point where we’re just waiting for all the inspections to be completed. It’s been a labor of love transforming this place and bringing it back to life.”
Robust menu
When asked what is the most-popular Ruckus Taco Co. menu item, Kalmus hesitated a few seconds, kind of like a father of several kids would if asked to pick his favorite child.
“Everything is great,” he said, “but if I had to pick one, our nachos are amazing.”
Ruckus’s robust menu has something for everybody, with protein choices of Adobo Grilled Chicken, Seasoned Ground Beef, Chorizo, Beef Barbacoa, Chili Lime Cauliflower (vegan) and Carne Asada.
